The History of Bacù

Introduction

Bacù was born from the love for Italian tradition, its cuisine and from its nutrition model, which is the most beautiful and complex in the world. This is because it was born from folklore, directly from the heart of our country. Starting from here, from this simple principle, we select excellent quality raw materials. How do we do it? We do it by firmly believing in the goodness and value of tradition.

Storytelling

Our adventure gets its name from the life and example of Mastru Bacù, an ancient Sicilian street vendor, who sold herring and herbs, heads of lettuce, eggs, bread, carobs, strawberries and legumes. Bacù was one of the most famous examples of Sicilian folklore. In fact, among some of the oldest testimonies of Italian culinary culture. Street vendors were the fundamental figures of tradition and definitely played a leading role.

They were the street vendors who, in Sicily and in a very poor Italy, that of the early twentieth century, supplied all the villages, hamlets and districts of the Bel Paese, bringing freshly harvested vegetables, eggs, goat and sheep cheese, a few mushrooms, and everything that could fit inside their “Panaro”, the wicker basket in which Bacù and the other street vendors kept their food. Their countertop, the one on which they displayed their products, was always full of surprises: vegetables and cured meats, cheeses and legumes, but also tobacco, liqueurs and spices. It is thought that Mastru Bacù lived in eastern Sicily, near the great volcano Etna, between the end of the 19th and the beginning of the 20th century.

He arrived every day from the North and went around in an improvised carriage with a few wooden planks held together with shredded olive branches pulled by a donkey. Bacù wore long trousers and boots, and every time he arrived with tomatoes and potatoes, sausages and beans, everyone knew that his name was a guarantee of quality and transparency and that only the best products could be found in Bacù’s basket.
