Vineyard planting system: espalier system with Guyot pruning
Age of vineyard: 30 years

Harvest: second decade of October
Vinification: the harvest occurs during the first decade of October when grapes are subjected to a natural drying process in the vineyard. The harvest and the following destemming steps both happen manually, followed by cold maceration and thermo-regulated fermentation. That last step ends naturally when the 14% of the alcohol volume is reached, resulting in 80g/l of sugar residue.
Ageing: wine ages in steel keeping the specific qualities of the grapes intact.

COLOUR: crystalline with intense yellow colour
SCENT: particularly complex with a bouquet of aromas from the yellow Yasmin to ripe white and yellow pulp fruit
TASTE: pleasantly sweet, fresh and balanced

SERVING TEMPERATURE: 10-12° C
FOOD PAIRING SUGGESTIONS: this is a moderately sweet wine, fresh and balanced, perfect to be paired with both fruit desserts (or dry fruit), and blue-veined cheese or medium-aged cheeses.
